A Basic Meatloaf

There really isn’t a cool way to name a meatloaf, so I asked for my husband’s expert opinion. The only basic characteristic of this meatloaf is that…it’s easy? The addition of an odd sounding ingredient truly sends the flavor of a basic meatloaf over the top.


Ground beef- 2lbs
Yellow onion- 1 small diced
Parsley- handful minced
Egg- 1
Milk- 1 cup
Ritz crackers- 1 cup crushed
Ketchup- 1/2 cup
Garlic powder- 1tbsp
Salt & Pepper- to taste
Do you have a meat loaf pan?

For sauce:

Ketchup- 3/4 cup
Worcestershire sauce- 1 tbsp
Apricot preserves- 1/4 cup
Brown sugar- 1/4 cup

Show time!

Pre- heat your oven to 375*
You’re going to have to get your hands dirty… In a large mixing bowl add meat, diced onion, parsley, egg, milk, crackers, ketchup, and seasonings. Mix by hand until all items have been well incorporated and it becomes almost tacky.

Spray your loaf pan. Transfer meat to your pan and smooth it out creating an even shape. Place in the oven for 90 minutes.

In a small bowl combine ketchup, worcestershire sauce, apricot jam, and brown sugar..whisk until well incorporated. Half way through your oven time (45 minutes) cover your meat loaf with the sauce and return it to the oven. Reserve some extra sauce …You’ll want some. That’s all, enjoy!

Tips: It will be hell to clean the meat loaf pan if you don’t really coat that bad boy. Parsley is not vital to the recipe, it’s more for appearance ‘cos I’m fancy…You end up using almost a full sleeve of crackers and I smash them in handfuls directly over the meat. This recipe really will change your perspective on meatloaf.
